This is something you can easily throw into your slow cooker as you’re clearing the breakfast dishes. Then head out for the afternoon – when you come back, supper will be ready and waiting to warm you up from the inside out!
Hearty Barley Beef Stew
Ingredients:
- 1 tablespoon olive oil
- 2 pounds boneless beef chuck roast, cut into 1″ cubes
- salt & pepper
- 8 ounces sliced baby bella mushrooms
- 16 oz baby carrots, each cut in 2-3 pieces
- 1 ½ tsp minced garlic
- 4 medium-large yellow potatoes, peeled and cut into 1″ cubes
- 1 large yellow onion, chopped
- 6 cups beef broth
- 1 cup dry red wine
- 1/4 cup tomato paste
- 1 tablespoon Dijon mustard
- 1 teaspoon dried thyme
- 3/4 cup pearl barley
- 1 bay leaf
Additionally:
- Crusty bread for serving
Directions:
- Okay, first, look at these ingredients. You have most of this already! Don’t panic.
- Cube the beef and pat dry with paper towels. Sprinkle it generously with salt and pepper.
- Next, throw a drizzle of oil in a skillet, and add the seasoned beef cubes to it in small batches at a time. Cook each batch until the cubed beef is cooked and seared on all sides. Don’t skip this step! A quick sear will lock in flavor and keep the meat from drying out.
- Add the beef to the slow cooker and all other ingredients through the bay leaf. Stir well to combine.
- Put the lid on the slow cooker and cook on high heat for 4 hours. Then, reduce heat to low and cook for another 2 hours. Serve with bread for dipping.
